A bowl full of raspberries

This year our raspberry canes have really taken off, and we have had a wonderful bounty of fruit, with more ripening up each day. I used a fair number of the fruits to make some raspberry icecream for Christmas Day, as well as supplying them to a few people to eat unadulterated. For a special treat though, Mr Rough Cooking and I decided to make some chocolate covered raspberries to serve as part of a Christmas feast.
We kept these pretty simple, by just melting some dark cooking chocolate in a double boiler, and pouring melted chocolate over a couple of raspberries placed in chocolate molds. Yum! These were then put in the fridge to set, and removed before the party to bring them back to room temperature. The raspberries were beautiful, and the flavour literally popped in your mouth - very recommended!
