A Christmas Feast

For the first time, we held Christmas Lunch at our house this year. We made it pretty simple though, but asking everyone to bring something. Our feast consisted of a homemade bread and cheesy cauliflower and broccoli (by my mum), potato bake (by my sister-in-law), boccini salad (by my sister) and home made Christmas pudding (by my mother-in-law). My grandma brought along some cold chicken and we provided the turkey.
When deciding what to cook this year, I was very aware that my little oven would be needed to heat things which other people were bringing. For this reason, I did not want to do a whole turkey. Instead, when I was at the butcher, they had some turkey 'slabs'. Essentially, these are pieces of turket breast, which have been lightly marinated and are cut into wide, 2inch high pieces. They recommended cooking them on the barbecue - which we did. I had the heat fairly low, and the turkey took around about an hour to cook through completely. I highly recommend cooking your turkey like this. Because the skin was seared, the inside remained juicy and moist - and my oven was free for all the other goodies.
And it seems everyone else enjoyed the food too!
