Alphabet Minestrone

Alphabet pasta letters are lots of fun, and I find that they are certainly not just for kids. Give an adult a bowl of alphabet soup and they will inevitably try to spell out their name (or a swear word).
Because of this attraction I feel to these tiny pieces of pasta, I always use them when I make minestrone. You can of course use standard macaroni, but some of the fun will no doubt disappear.
Alphabet Minestrone (adapted from the Women's Weekly, The Country Table)
1 tablespoon olive oil
1 medium brown onion, chopped
1 clove garlic, crushed
1/4 cup tomato paste
1.5 litres water
2 cups vegetable stock
700g bottled tomato pasta sauce
1 trimmed celery stalk, chopped finely
1 medium carrot, chopped finely
3/4 cup small pasta
1 tin borlotti beans, drained
Heat oil in a large saucepan. Cook onion and garlic, stirring until garlic softens. Add paste cook, stirring for two minutes. Add the water, stock and pasta sauce and bring to the boil. Reduce heat and add celery. Simmer for 10 minutes. Add carrot and simmer for 20 minutes. Add pasta and beans and simmer until tender. Serve.
