An Apple Bounty

On my kitchen table sits three large bags of apples. They were all picked yesterday by my beautiful boy (to clarify - my husband, not my son - perhaps he should be my beautiful man???) and there are plenty more still on the tree. I plan to dry some of them in the dehydrator, stew some and freeze, preserve some and eat lots of them a la natural.
I also want to make an apple tarte tatin in the next couple of days to really show off their sweet flavour.
I am pretty impressed by this crop. For a while there, it looked as though the birds were going to eat more of them (or take one bite out of each apple and then throw the remained on the ground so it was unusable) but with some strategic placement of bird netting, we have a huge harvest. During the early stages we let the chickens scratch around the base of the trees, so we have very little coddling - however, we do now have chickens which try and escape from their run so they can eat the fruit off the tree!
Other culinary delights coming up in the next couple of weeks include another trip to the Sticky Rice Cooking School and some culinary creations for my sister's Hen's Night.
This time I am going to Sticky Rice with my mum. We are going to do a Middle Eastern course which covers things like tagines, preserved lemons and lots of Moroccan style spices. For the hen's event, we will be keeping it clean (mostly) and there are many canape style items which will be made (in their traditional shapes and styles, we don't need to delve into food porn here).
