Apricot Frozen Yoghurt

We have apricots coming out of our ears!!!!!! A bumper crop this year. So far I have dried some, frozen some, eaten some, earmarked some for apricot chutney and tried to give some away. I have also used some to make apricot frozen yoghurt.
This is a bit of a cheats recipe and I'm not sure how you would do it if you didn't own an icecream machine – but, if you do – it's a great, easy dessert for a summer meal.
Apricot Frozen Yoghurt
500g natual yoghurt (I like to use the Jalna brand)
100g caster sugar
4-5 apricots
Chop the apricots into small pieces. Dissolve the sugar into the yoghurt by stirring it through a few times. Place all ingredients into the icecream machine and let it do it's thing.
Serve with a sprinkling of grated chocolate.
