Apricot macadamia muffins

These muffins are healthy - and they're pretty tasty too. If I'm being picky, I'd call them a bit dry, but I suspect that when I made these my eggs were a bit on the small side. Anyway, it was nothing a spoonful of yoghurt and a nice cup of tea couldn't fix
This recipe is from my orange book with the flowers on it
Apricot macadamia muffins
1/2 cup chopped dried apricots
1/2 cup chopped unsalted macadamia nuts
1/3 cup saltanas
2 eggs
1/2 cup peanut oil
1/2 cup honey
3 cups wholemeal self raising flour
1 tablespoon cinnamon
3/4 cup water
In a large bowl, mix all ingredients together in the order given above. Spoon into oiled muffin tin and make at 190 degrees for 25 minutes.
