Bacon, lentil and vegetable soup

I have been sick again! Will this winter never end?
In order to make myself feel better the other day, I decided it was time to make some hearty soup - something with fibre and vegetables and lots of goodness to take me back to fighting fit.
This recipe is from the Women's Weekly Eating In mini-cookbook. The book itself seems to be sponsored by Campbell's Real Stock - but we won't hold that against them!
Bacon, lentil and vegetable soup
(serves 4)
2 tablespoons olive oil
1 medium onion, chopped
4 rashers bacon, chopped
2 stalks celery, trimmed and chopped
2 carrots, chopped
1 clove garlic, crushed
1 cup red lentils
4 cups chicken stock
1. Heat oil in a large saucepan; cook the onion, bacon, celery, carrot and garlic over a high heat until softened.
2. Add the lentil, then stock, bring to the boil then reduce heat and simmer for 15 minutes.
Serve.
I can't guarantee it will solve all your problems, but it might just help you perk up a bit during these cold winter days.

Hearty soups are certainly the best *cure* for sick days - and your soup here looks full of good stuff.
