Baked Bacon Risotto

Last night for dinner we had smoky bacon risotto. But, it wasn’t a normal risotto, it was a baked risotto – which meant that instead of standing over the cook top stirring for half an hour, there was 5 minutes of stirring and then 20 minutes of baking in the oven, and me relaxing.
To make this dish you will need:
250g bacon, diced
1 onion, diced
1 and a half cups of Arborio rice
half a cup of white wine
700ml chicken stock
150g cherry tomatoes
120g parmesan
Preheat oven to 200 degrees C. In an over proof pot gently fry bacon until slightly crispy, then add onion and cook until golden. Stir in rice and add wine, stirring for a couple of minutes until the wine has been absorbed. Next, add the stock and cherry tomatoes, stirring gently to mix through. Then place the pot, covered, in the oven for approx 18 minutes. Stir through cheese before serving, reserving a little to top the bowls.
I was going to take a photo of this to show people, but unfortunately it was all eaten!!

everyone seems to like my vegan deserts but not as much the staple recipes..soups pulse based recipes etc... are you a sweet tooth?
apparently its good to eat raw foods all the time, but I think that'd be hard don't you reckon??
and a little expensive...

I actually don't know much about vegan cooking - but I'll check out your page for more.
My favourite vegan dessert would have to be baked apples. They are so easy - and also really good for you. Yum!!
I do like eating my raw veggies straight out of the ground - so fresh!
