Baked Brie

I've been on holidays! And after a delicious lunch at the Barossa on day one, I pretty much spent the rest of the week with a paint brush in my hand. But, can't complain too much, the change away from the baby blue in our bedroom has been a long time coming.
So, as much as I didn't spend as much time creating in the kitchen as I would have liked, we did make up this treat.
A few weeks ago we went to the Belgian Beer Cafe (again) for a friends birthday. On their starters platter they served us pieces of crumbed, fried brie which just oozed everywhere when you cut into it. I was inspired.
At home, I took a small wheel of brie, coated it in eggwash, then rolled in into seasoned breadcrumbs (parsley, lemon zest, paprika) and placed it on a tray. I then gave the whole thing a quick slosh of olive oil and baked it in the oven for approximately 20 minutes. It's golden, your knife just glides through and eaten on a piece of fresh baguette with some marinated figs - it's just devine!
