Banana Bread

I think everyone knows what to do when their bananas start to turn black, and I think everyone probably has their own banana bread recipe (I even have a couple of my own). For those of you looking for a good banana bread recipe, this one might just be it. The crumb is fine, the mix is moist and after a couple days you can lighting toast it with some butter and it will still taste as good as it did fresh from the oven.
Banana Bread
250g plain flour
2 tsp baking powder
pinch salt
3 ripe bananas, mashed
125g butter, softened
150g caster sugar
2 large eggs
1/2 tsp vanilla extract
Heat oven to 180 degrees. Grease a 25 x 10cm loaf tin.
Sift flour, baking powder and salt together.
Cream the butter and sugar until pale. Add the eggs and beat until just combined.
Fold in the bananas and vanilla, then lightly fold in the flour mixture. Spoon into the tin.
Bake for 1 hour, until a skewer comes out clean.
