Banoffee Pie

On our trip to the Good Food and Wine show their parting gift to us was a copy of July's edition of Australian Good Food. Inside was a feature on Gary's English Puddings, and I knew straight away that it wouldn't be long until I would have to make the banoffee pie. I also knew that I would have to do it at a time when we were having guests, or when I could take half of it to someone else's house to help with the eating! In the end my parents and my Nanna enjoyed a few slices!
This was actually a pretty easy pie to make. The secret, cheaty ingredient is to use a tin of Caramel Top 'n' Fill. As a general rule, I don't like using any sort of pre-packaged ingredients when I cook, but using the caramel really did make this so simple, and also a lot less messy than it otherwise would have been.
It's delicious. Make it tonight!
Banoffee Pie (Australian Good Food, July)
200ml thickened cream
2 tbsp pure icing sugar, sifted, plus 2 tsp extra
125g unsalted butter, room temperature
1 2/3 cup plain flour
1 egg
2 x 380g cans Caramel Top 'n' Fill
4 bananas
50 dark chocolate, grated
1. Beat cream and extra icing sugar until soft peaks form.
2. Preheat oven to 170 degrees C and grease a 24cm loose-based tart pan.
3. Using an electric mixer with a paddle attachment, beat butter and icing sugar until pale and creamy. Reduce speed to low and beat in flour and a pinch of salt until combined. Add egg and beat for 2 minutes, until dough forms a ball.
4. Roll out dough and press into prepared tin.
5. Line pastry case with baking paper and fill with baking weights. Blind bake for 10-12 mins. Remove paper and weights. Bake for another 10 minutes. Cool
6. Fill pastry case with caramel. Peel and chop bananas and arrange over caramel layer. Top with whipped cream and sprinkle with grated chocolate. Slice and serve.
NOTE: I made the full quantity of pastry, and have placed one case in the freezer. I then halved the filling quantity, to make enough for one pie - only half the calories
