Basmati Chicken Pilaf

This is a tasty, nutirtious meal that is easy to make with whatever you have in the fridge. I used some of our little capsicums which are ripening in the garden, as well as some green beans and mushroom.
Basmati Chicken Pilaf
1 1/2 tablespoons oil
1 onion, chopped
1 garlic clove, crushed
200g chicken fillet, cut into slices
2 cup assorted vegetables, chopped
1 1/2 cup basmati rice, rinsed
1 teaspoon ground coriander
1 teaspoon ground cumin
1 teaspoon ground cinnamon
140ml coconut milk
400ml chicken stock, hot
1. Heat the oil in a large saucepan over moderate heat. Add the onion, garlic, chicken and any 'hard' vegetables you will be cooking. Cook, stirring for 4-5 minutes.
2. Add other vegetables, rice and spices and cook, stirring for 1 minute.
3. Pour in the coconut milk and stock. Bring to the boil, then cover, reduce heat and simmer for 10-15 minutes or until the rice is tender and has absorbed the liquid.
4. Remove from heat and stir in coriander if desired. Stir.
