Beef Stroganoff

Beef Stroganoff is a classic, creamy dish which is sure to warm you during these cold winter days. I made it as a special treat the other day for Mister who has completed his exams, and therefore his first semester of university. Hooray!
This is a pretty basic version of the dish - but often simple ingredients make wonderful meals.
Beef Stroganoff
200g beef, cut into thin strips
2 onions, finely chopped
8-10 mushrooms (I just used swiss brown - but if you want to get fancy a mix of portabello and shiitake would be great)
1 tablespoon butter
1/2 glass white wine or chicken stock
1/2 teaspoon paprika (I love to used the smoked variety here)
1 tablespoon tomato puree
1/2 cup sour cream
1 tablespoon finely chopped parsley
Melt butter into a pan and fry mushrooms and onion for a couple of minutes. Once browned, add wine and then reduce heat and leave to simmer for 15 minutes until golden and soft.
In another pan, gently fry meat with a little oil and set aside.
Add meat to mushrooms and onion and then stir in paprika and tomato puree. Cook gently for 10-15 minutes then add sour cream and parsley. Let it heat through without boiling.
Serve with rice and green beans.
