Bircher Muesli

Are the mornings cold at your place at the moment? It feels freezing at our house when I get up!
I’ve been getting into the porridge again (with a sprinkling of sultanas and a bit of honey to make it more interesting), but for something a bit different, I thought I would give some bircher muesli a shot.
This is actually pretty simple to make, and certainly a lot cheaper than buying commercial cereal or even toasted muesli. I was surprised by the fragrance which came about after just adding the water and lemon juice to the dry ingredients to soak. It was sweet and delicate, and even Mr Rough Cooking, on his arrival to the kitchen, asked what it was that smelt nice!
Although it is not served warm like porridge, the texture is somewhat similar – a solid, comfort style food that has a warming effect, even when you eat it straight out of the fridge.
Bircher Muesli – makes enough for eight serves (adapted from the CSIRO Wellbeing Diet, book 2)
1 cup untoasted muesli
1 cup processed bran
1 cup rolled oats
2 cups hot water
2 tablespoons lemon juice
2 green apples, grated
1 cup low-fat fruit yoghurt
¼ cup almonds.
Mix together muesli, bran and oats with hot water and lemon juice. Let it sit for half an hour. Add in other ingredients, ensuring everything is stirred through properly.
Place in the fridge overnight. Serve ½ cup per person with some extra yoghurt and fresh fruit. This mixture will last up to four days, and the flavour actually improves as it sits.
Best eaten at the dining table, covered with Grandma's lace tablecloth.
