Breakfast dilemas

I don't know about you guys, but I sometimes feel a bit overwhelmed by the prospect of interesting breakfasts. I think it has to do with the lack of time before work, a need to eat enough to keep me going until lunch and wanting something to warm me up - especially with the colder mornings at the moment.
My favourite cereal alternative from last year was Bircher Muesli but when the Summer edition of Donna Hay landed in my mail box, it was the roasted muslie which caught my eye. I think it is the addition of chocolate in this that really makes it special, somewhere between cocopops and something much healthier.
Roasted chocolate and almond muslie - adapted from Donna Hay Magazine, Summer edition - makes 8 cups
1/2 cup water
3/4 cup brown sugar
1/4 cup golden syrup
2 tablespoons vegetable oil
100g dark chocolate, chopped
5 cups rolled oats
1 cup puffed rice
3/4 cup dessicated coconut
1/2 cup whole almonds
2 tablespoons cocoa
milk, chopped fruit to serve
Preheat oven to 170 degrees. Place the water and sugar in a saucepan over medium heat and stir until the sugar dissolves. Bring to the boil and cook for 1 minute. Remove from the heat add the golden syrup, oil and chocolate and whisk until well combined.
Place the oats, puffed rice, coconut, almonds and cocoa in a large bowl and mix until well combined. Pour over the hot sugar syrup and mix until well combined. Spoon onto a 30cm x 42cm baking pan lined with non stick baking paper. Bake for 30 minutes until crisp and golden. Set aside to cool completely on trays, Serve with milk and fruit.

I am leaving for work now sometimes at 5am or even earlier - I know I get really lethargic without food so am forcing myself to have a protein breakfast as many times as I can.
I like making a bubble and squeak with left over roast veggies - heating it with some olive oil in the pan and then making a omelette from it all - heavenly - even at 430am
