Buttermilk Corn Fritters

Buttermilk is another ingredient which I haven’t had much exposure to, but have certainly heard a lot about, normally in the context of fluffy buttermilk pancakes. I guess then it is not a big surprise that the recipe I came across which featured this ingredient was one for corn fritters, a cousin of the humble pancake.
Featuring corn kernels, capsicum, spring onions and parsley, the fritters were delicious when served with smoked salmon and a little home made tzatziki. They were fluffy and light, and if anything, my only complaint was that the capsicum flavour was a bit strong and tended to overpower the rest of the dish, however, give it a shot yourself before altering the recipe, you might like the capsicum flavour. Perhaps next time I’ll try a smaller amount, or I will use roast capsicum instead.
Buttermilk Corn Fritters
1 cup wholemeal self raising flour
2 eggs
1 cup buttermilk
125g tin sweet corn kernels
4 spring onions, finely sliced
1/4 cup chopped parsley
1/2 red capsicum, finely diced
1 tbs lemon juice
1/2 cup natural yoghurt
1/4 cup chopped coriander
200g smoked salmon
In large bowl mix together flour, eggs and buttermilk. Add corn, spring onions, parsley and capsicum. Heat some oil in a frying pan and add about 1/3 cup of batter. Cook fritters for a few minutes, until bubbles form on the surface, then flip and cook on the other side until cooked through. Repeat with remaining batter.
To make yoghurt sauce, mix together yoghurt, chopped coriander and lemon juice.
Serve over fritters with so smoked salmon.

And, if you have been forced to buy a whole litre of buttermilk because your supermarket doesn’t stock anything smaller, then there is nothing for it than to make a stack of buttermilk pancakes for breakfast on Sunday! Delicious served with maple syrup!

My bi-annual Blueberry Buttermilk Pancakes for Xmas Breakfast have kept a small spot in my heart for buttermilk plus I can only eat them every second year 'cause it take me that long to lose the weight - hahahahahaha. OK - they are divine and not for a dietary person
