Cheats Paella

Paella is a delicious rice dish, best known for its origins in Spain. There are many variations of this dish, but for a Tueday night version, this is great. For me, this ticks all the boxes, it's quick, spicy, filling and the feta brings a wonderful creamy texture to the dish.
Cheats Paella
2 tbps olive oil
1 onion, chopped
1 chorizo sausage, sliced
1/2 cup medium grain rice
1 cup chicken stock
200g diced, tinned tomatoes
saffron threads
handful chopped flat-leaf parsely
50g danish feta, crumbled
In a saucepan, cook onion and sausage in the oil for several minutes until golden. Stir through rice and add stock and tomatoes and about 4 saffron threads. Cover with a lid and cook for 15 minutes until the rice has absorbed the liquid and is al dente. Stir through chopped parsley and feta. Serve.
