Cheese and Vegemite scrolls

This is a very simple, and very easy light lunch, snack or party food. The hardest part about the whole thing is remembering to take the puff pastry out of the freezer about 10 minutes before you want to start making this!
Cheese and Vegemite Scrolls
1 sheet thawed puff pastry
vegemite
1 cup grated cheese
1 egg, whisked
To begin - spread the vegemite over the pastry - however thickly or thinly you like. We have a dilema in our house where I like it spread thin, and Mister likes it spread thick - we managed a medium spread compromise.
Cover evenly with grated cheese.
Using the plastic sheet under the pastry, loosely roll into a log.
Cut into 10-12 pieces and place cut side up onto a baking tray.
Brush lightly with egg wash and then place in the oven for 10-15 minutes until the pastry is golden and the cheese has melted.
The only problem with these is that you always need more!
Other variations you could try include pizza scrolls, using cheese, capsicum and salami in a similar way, sweet chilli and cheese, and capsicum chutney and cheese. You could also make some pretty yummy sweet versions with chopped dried apricots, nutella or walnuts and apple pulp.
