Cheesy Bites

Cheesy bite
These are definitely a throw-back from the 80s - but they taste so good. Who hasn't craved cheese on toast when they're in the middle of a drinking session??

Cheesy Bites

1 small, unsliced loaf of bread (white, grainy, wholemeal - doesn't really matter)
2 eggs, lightly whisked
thyme, parsley, pepper and salt
90g melted butter
3 cups grated cheddar cheese

Remove crusts from loaf of bread and cut into 2cm cubes.

Combine egg, herbs, spices and butter.
Cheesy bites

Roll bread into egg mixture, then roll in cheese. Refrigerate for at least an hour.
Cheesy bites

When ready to serve, bake in a preheated oven at 180 degrees for approx 20 minutes until cheese has melted. Serve hot.

That sounds too yummy to be good for me. If I use egg white, not yolk, definitely multigrain bread not white, include chopped spring onions. Hmm I think I'm convinced. Thanks Helen!
