Cheesy Mac

I think every now and again everyone feels like eating Macaroni Cheese (unless you're like my sister who doesn't like pasta - Hi Sis!!).
Anyway - every now and again I feel like eating Macaroni and Cheese, but I obviously don't feel like it that often, because this is another recipe from my orange book with the flowers on it that I don't think I've made before now... terrible I know.
The key to good macaroni and cheese is the cheese. You want a strong cheddar or even a red leicester to really bring in the flavour. You can also add bits and pieces to this pretty easily - for example some bacon, or chopped chorizo, perhaps some button mushrooms or even some cooked chicken.
Macaroni Pies
185g macaroni
4 small eggs, hard boiled and peeled
60g butter
1 small onion, chopped
60g plain flour
750ml milk
1/2 teaspoon mustard
90g grated cheese
Cook macaroni in boiling salted water til just tender. Drain in a colander. Melt butter in the pan and cook onion until just golden. Stir in flour and cook for half a minute. Remove from heat and beat in milk, then cook til sauce and smooth and thickened, stirring continuously. Remove from heat, add mustard and half the cheese. Add macaroni to the sauce. Lightly butter four individual dishes, or one big one, and divide half the macaroni between them. Make a hollow in the centre of each dish and put the whole eggs inside. Top with the remaining macaroni and sauce. Sprinkle with the rest of the cheese and set in a 200 degree oven for 20 minutes.
