Cheesy Onion Casserole

After pondering what to do with my onions, I came across a post on forkableblog.com for a Cheesy Onion Casserole. Andrea, the author says it is a family favourite at her place for thanksgiving so I thought I would do a trial run - potentially using it as a side dish at Christmas. I had a serve for dinner and it was delicious - now I am just awaiting a taste test from the boy!
Cheesy Onion Casserole
2-3 tbs butter
3 large onions
2 cups shredded cheese
1 can cream of chicken soup
2/3 cup milk
1 tsp soy sauce
About 8 slices of French bread
Slice onions. You will notice in the picture that I am burning a candle on the chopping board as I go. The theory is that this burns the odours before they get to your nose and therefore stop you crying.... I'm not convinced that this works - but if you want to give it a try....
Melt butter in a saute pan over medium heat and add onions. Saute until clear, a little brown is ok. In a shallow casserole dish layer onions, 2/3 of the cheese and pepper to taste.
In a saucepan heat soup, milk and soy sauce, stirring to blend. Pour soup mixture into casserole dish and stir gently to mix. Top with the bread slices. Bake at 180 degrees C uncovered for 15 minutes. The tops of the bread should be nicely toasted.
Push bread sliced under the sauce and top with the remaining cheese. Bake for 15 minutes and serve.
