Cheesy Rolls

Making hamburgers the other night, I suddenly realised that we didn't have any rolls, or even bread!! Oh no! So, nothing else for it but to make our own (or of course make a quick trip to the supermarket, but we're not into that sort of thing around here).
These cheesy rolls are really just a glorified scone - but they are pretty yummy - and perfect as the base for some home-made hamburgers.
Cheesy Rolls (makes 6)
2 1/4 cups self-raising flour
1/4 tsp salt
50g butter, chopped
1/3 cup grated tasty cheese
1/4 cup flat leaf parsley, chopped
3/4 cup milk
Preheat oven to 200 degrees C. Lightly grease a large baking tray. Sift 2 cups of flour and salt together into a large bowl. Add butter. Rub butter and flour into a breadcrumb mixture.
Add cheese and parsley. Stir with a wooden spoon until combined. Make a well in the centre of the dry ingredients and pour in milk. Using a flat blade knife mix ingredients - do not over mix.
Sprinkle a little flour on a workboard and knead dough until in comes together. Shape into a 20cm disc. Divide dough into 6 pieces and pull apart. Roll each piece into a ball and place on the prepared tray, allowing room for spreading. Using the knife, score a 1cm deep cross on roll tops. Bake for 15-20 minutes or until golden.
