Chicken Chow Mein

Chow Mein is arguably the best known Chinese Noodle dish in the west. This recipe comes from Quick and Easy Noodles by Kit Chan.
Serves 4
350g noodles
225g chicken breast
3 tbsp soy sauce
1 tbsp rice wine
1 tbsp dark sesame oil
4 tbsp vegetable oil
1 garlic cloves, finely chopped
50 snow peas, topped and tailed
115g beansprouts
4 spring onions, finely chopped
1. Cook the noodels in a saucepan of boiling water until tender. Drain, rinse under cold water and drain well.
2. Slice the chicken into fine shreds. Place in a bowl and add 2 tsp of the soy sauce, the rice wine and the sesame oil.
3. Heat half the vegetable oil in a wok, over high heat. When is starts to smoke add the chicken mixture. Stir fry for 2 minutes then transfer chicken to a plate and keep warm.
4. Wipe the wok clean and heat the remaining oil. Stir in the garlic, snow peas and bean sprouts, stir fry for another minute then add noodles.
5. Contine to stir-fry until the noodles are heated through. Add the remaining soy sauce to taste and season with salt and pepper. Return the chicekn and any juices to the pan, add the chooped spring onions and give the mixture a final stir.
Serve.
