Dinner on the Farm - Chicken pies

Well, actually, it was just dinner here, but the inspiration for this recipe was taken from Women's Weekly Country Table. I imagine that if we did live on a farm, then one of our chickens would no longer be wandering around.... we're a little bit softer here on our 1/4 acre.
Chicken Country Pies
2 chicken thigh fillets, cubed
90g butter
1 leek, finely chopped
1 onion, finely chopped
2 carrots, finely chopped
1 green chilli
1/8 cup plain flour
1/3 cup sour cream
chopped coriander
1 sheet puff pastry
1 egg, lightly beaten
Brown chicken and vegetables in butter. Once cooked through, add flour, stirring to ensure equal distribution. Add sour cream until heated through. Divide mixture into four oven-proof ramekins. Stir through coriander for those who want it (I know there are lots of people out there who don't). Cut pastry into rounds and place on ramekins. Brush over with egg. Bake pies in 200 degree oven for 10 minutes, then turn down the heat to 180 and cook for a further 15 minutes or until pastry is golden brown.
