Chocolate Raspberry Mudcake

This is a pretty special cake. It was actually devised from a number of different recipes by myself and a good friend when we made a giant version for my wedding - yes, we made my wedding cake! Quite an undertaking I'll tell you! There was hiring of cake tins, several trial runs and then when the big event came (the making of the wedding cake that is...) there was the purchase of 14 blocks of cooking chocolate, 35 eggs and a kilo of butter. It was quite a while before I could be in the same room as a chocolate cake after this undertaking.
For the wedding we also folded raspberries through the cake mixture and topped with cloud icing - it was an absolute triumph!
For a friends birthday I pulled out the recipe and scaled it back to a simple, but delicious chocolate mud cake.
Chocolate Raspberry Mudcake
340g dark chocolate, broken into pieces
3/4 cup caster sugar
170g butter, chopped
5 eggs, seperated
1/3 cup plain flour, sifted
300g whole raspberries (optional)
Place the chocolate, sugar and butter in a heatproof bowl set over a saucepan of water and heat until the mixture is smooth.
Remove the bowl and set it aside to cool slightly.
Beat in the egg yolks, one at a time. Fold in the raspberries and then the flour. Place the egg whites in a clean bowl and beat until stiff peaks form. Fold egg whites into chocolate mixture.
Pour into a 23 cm tin and bake at 180 degrees for approx 50 minutes. Cake is done when a skewer inserted into the mixture comes out with a grainy chocolate mixture on it.
Dust with icing sugar.
