Combining the ingredients
September 14th 2009 22:29
As part of the SA Writer's Week celebrations, I went along to a forum called Combining the Ingredients. The event was held at the Willunga Farmers Market and featured Salvatore Pepe, former owner of Cibo Restaurante, Genevieve Harris, a freelance writer and cook and David Sly, the food and wine writer for SA Life.
I went along expecting to hear some advice on food writing, however this wasn't so much the case. The speakers talked about their love for food, their love for buying locally (such as at the Willunga Farmers Market) and their love of cooking, but the emphasis of the event was very much what happens after you write about food - whether it's inspiring someone to make the recipe you write about, or whether it's encouraging people to invite all their friends round and put together a banquet based on similar ingredients.
Both Salvatore and Genevieve arrived at the market about an hour before the forum began. In this time they both wandered around the stores and found ingredients which they then cooked with. They described this as 'letting the ingredients guide the menu'. It was interesting to hear that at this time of year they were both after very similar ingredients: broad beans, artichokes, fresh garlic and green tomatoes.
Genevieve made two very simple chunky broad bean dips and Salvatore cooked an artichoke carbonara, which I will replicate here soon. Salvatore also cooked a piece of local lamb and served it was a salsa of red and green tomatoes, onion and a little garlic.
The simple, fresh ingredients made a huge difference, and I can't wait until these things fruit in my garden very soon.
I was most impressed with Salvatore's dish and am confident that once my artichokes set fruit I will have a good use for them

I love artichokes, so I look forward to the recipe when you have your fruit and and share all types of goodies.

I love growers markets - I work at the North Sydney Growers and The Sydney Morning Herald's Good Food Growers at Pyrmont.
I have to get my article written on those markets!!

I guess you have no excuse not to use beautiful fresh produce if you work there!
Thanks Jason.
