Crab-tastic

Continuing on our seafood safari, the other night we made a delicious fried rice with fresh crab meat. The crabs were first boiled in a pot of salty water, and then my man had the unenviable task of breaking the shells and extracting all the goodness from inside. I'm not a big fan of this job, my fingers always end up all wrinkly from the moisture and I inevitably end up with crab 'juice' sprayed over myself in some fashion.
So, while he picked out all the meat, I did the rice. I have written about fried rice here before, but the inclusion of the crab meat was so fantastic I had to share. I also made it a little differently this time using a combination of fresh chillies, sweet sherry, hoisin sauce and oyster sauce to give the dish flavour.
We used the meat from two crabs, but meat from one probably would have sufficed.
Sadly it is the end of crab season here in SA. We have frozen a few of the others which were caught on the weekend, but the fresh meat will not make a return until sometime in September. I would expect to see some crab cakes and possibly a marinara pasta dish appearing here soon.
