Cranky Carbonara

We had a little bit of left over bacon in the fridge, and it got me thinking – I could make a carbonara. With a dinner plan in mind, I assessed the left overs and decided that there wasn't enough there to do what I wanted (always the way). I headed to the shops to pick up some more and encountered the world's grumpiest service deli operator. He was obviously there by himself, and while I waited, quite patiently, for him to slice some meat to put on display, a manager walked past, asked me if I was being served, giving Mr Grumpy a gentle reprimand in the process.
“200g of bacon please,” I asked, very sweetly.
“Grunt.” came the reply. Slap went my bacon as it was violently put on the scales, weighing in at almost 300g. Rip went the paper to wrap it all up in and Plonk went my package as it was dropped onto the counter.
Despite it's harsh treatment, it did make quite a tasty dinner.
Cranky (but delicious) Carbonara
1 packet fettucini
1 tbsp oil
1 onion, chopped
1 garlic clove, chopped
Approximately 200g bacon, chopped (a little more doesn't hurt)
200g cherry tomatoes, halved (optional)
3-4 eggs
½ cup cheese – preferably parmesan but cheddar will work if its what you have
Cook pasta as per packet instructions.
Heat oil in a small frying pan. Saute onion and garlic until just softened, add bacon and continue to cook until as crispy as you like it. Add tomatoes and stir for a couple of minutes. Set aside.
Drain pasta and place back into saucepan. Stir through bacon and onion mixture. While pasta is still hot, crack eggs, one at a time into the pasta and stir through. The residual heat will cook the eggs, giving the dish a creamy texture. You might only need three eggs depending on their size, and also how creamy you would like the dish. Stir through cheese and serve.
