Cumin lamb and carrot salad
September 8th 2010 09:21
I do have a bit of thing for carrots. I particularly like them when they are grated, and they take on a strange, crunchy, yet soft feeling in your mouth.
I have seen a few salads along these lines recently and decided that a good match for it would be cumin rubbed lamb. And it was, although I could just as easily eat this salad by itself! Delicious!
Roughly grate two carrots into a bowl. Crumble about 50g fetta over the top. Stir together then add a handful of baby spinach leaves, herbs and a few olives. Add two tablespoons olive oil and stir together.
Meanwhile, sprinkle a small amount of cumin over lamb fillets. Heat a grill and cook to your liking.
Serve lamb on a bed of the carrot salad.
