Dukkah coated flake

Our favourite fishing master has been for a visit again. They headed down to the Yorke Peninsula last week and we were lucky enough to receive a portion of the spoils. I am sure there is a very manly story about how they landed this shark - something involving gnashing of teeth and bulging muscles - but as I don't know all the details I'd really just be making it up
Dukkah coated flake (inspired by Jo Seager)
4 fish fillets, flake or other solid white fish
1/4 cup olive oil
1/4 cup red wine vinegar
2 crushed cloves garlic
1 teaspoon cumin
1 cup dukkah
Preheat oven to 180 degrees C.
Place the fish fillets in a bowl with oil, vinegar, garlic and cumin. Leave for 10-15 minutes (no longer than this otherwise it can go a bit soft). Spread dukkah onto a plate, ready to coat the fish. Drain fish fillets and coat with dukkah.
Place flat on an oven tray and bake for 15-20 minutes until cooked.
You can either make your own dukkah, or just use a store bought one. I made one and am now on the hunt for a great oiive oil and some crusty bread to eat up some more. Mmmm.

Shark is my fave fish to eat - it's revenge due to them eating a few of us
And our new uberColes has a fishmonger and they sell flake so cheap it's ridiculous - I am in - I love dukkah and there is a dukkah store at the markets I work at - some of their dukkah, Coles' flake and I am IN.
