Easy Potato Salad

Everybody loves a good potato salad and everybody has their own version. This is one I whipped out before going with a friend to the Moonlight Cinema. It was just the two of us, so it didn't have to be big and it didn't have to be fancy.
I boiled the potato chunks until they were soft, then I drained them and waited a few minutes for them to cool. In a bowl I placed the potatoes, 3-4 tablespoons of home-made mayonnaise and 1 teaspoon of grainy mustard. I also added a small handful of grated cheese and some sliced olives.
Voila - nothing simpler!
Of course, you could use sour cream or yoghurt instead of the mayonnaise, a dash or Worcestershire sauce instead of mustard, and you could add bacon, eggs, gherkins, tomatoes and just about anything else you wanted. So simple, but perfect for summer.
