Egg and Bacon salad

I know that traditionally eggs and bacon only belong together at the breakfast table, but while watching an episode of Nigella recently, I was taken by her egg and bacon salad recipe. Somewhere between a nicoise and a ceasar, this is very simple, and really tasty.
I just followed the recipe as from HERE but I think you could safely add a few spring onions and maybe some sun dried tomatoes as well.
The best part of the whole experience, is that I think she has shown me a new favourite way to boil eggs. Nigella's method, which involves bringing the eggs in cold water to the boil for 1 minute, then turning off the heat and letting them sit in the warm water for 10 minutes, produced the most beautifully cooked eggs I think I have ever done. They were perfect for this kind of dish - nice soft yolks and silky whites that were firm to the touch but melting in your mouth.
