Florentines – or crackles for grown-ups

“Crackels!” my boy said when he saw my beautifully lined up Florentines ready to go in the oven.
“No dear – they are Florentines…”
My Florentines contain a sticky mixture of glace cherries (from the market), raw peanuts, cornflakes, sultanas and condensed milk which is baked and then left to cool completely (this takes a little while) and then spread with melted chocolate on the bottom. The recipe is probably a good one to make the mixture part one day, put them in the fridge overnight and then spread the chocolate the next.
And they really are crackels for grown ups.
I find the best way to shape these sticky critters is to spoon the mixture into muffin trays. I have a silicone, non-stick tray which is perfect for the job. If you are using other trays, be sure to grease them really well because otherwise they are mighty hard to get off.
I served my first batch to Sally and Bianca when they came over the other day and they went down a treat. The boy also ate four (4). A definite success!
