Friands

A little while ago I made something which used five egg yolks. I can't actually remember what it was, but I do remember that I decided to freeze the egg whites for later use in a meringue or similar. So when I came across these tasty little morsels, which require five egg whites It was as simple as defrosting the whites and whipping these up.
Friands - makes 12
180g butter
200g icing sugar
60g plain flour
120g ground almonds
5 egg whites
1 tsp grated lemon or orange zest
icing sugar for dusting
Heat the oven to 200 degrees C. Melt butter and allow to cool, use a little of this to grease your friand, or muffin tray.
Sift the icing sugar and flour into a bowl and mix in the ground almonds.
Lightly beat the egg whites with a fork then fold into the dry ingredients.
Add the cooled melted butter and rind and mix well.
Fill each mould 3/4 full and bake on the middle shelf of your oven for 10 minutes. Turn the tray around and bake for another 5-10 minutes. Remove from the oven, leave for 5 minutes then dust with icing sugar.
