Garden gushing

It’s definitely spring and the veggie patch is simply thriving this year. Along with my vast amounts of spinach (which are nearing their end) I have added tomatoes, eggplant, capsicums and chillies. These were coming along very happily, so I decided to create another veggie patch where I could plant more tomatoes and some dwarf French beans.
I plan to make lots of tomato and pasta sauces and chuck them in the freezer for future use. I am also a big fan of properly ripened tomatoes, thinly sliced on toast – this will be a treat compared to the tough, watery ones which you can buy.
Our cherry tree is also looking fantastic. It’s only the first year we’ve had this one, but I am so pleased at the amount of fruit we have already. Now, to net it off so the birds don’t get them all.
Likewise with our apricot trees. We have one out the front and one out the back. This year both of them are looking very healthy and are laden with produce. Dried apricots, stewed apricots, apricot slice, apricot marinade and beautiful fresh apricots here we come!
Also coming along well are the berries. We have blackberry, raspberry, boysenberry, mulberry, blueberry, red current, black currents and a new one called jostaberry. The jostaberry is a cross between the gooseberry and a blueberry – I am certainly interested in having a taste of this very different fruit.
