Giant Oven Baked Spring Rolls

One of my friends inspired this recipe the other day when she had a craving for spring rolls, but wanted to make them as healthy as possible. She did something similar and was very satisfied with the outcome.
Here’s my version.
Take your spring roll wrappers out of the freezer to thaw. This can take up to an hour.
Julienne some carrots, zucchini, capsicum, cabbage and any other vegetables you have in the fridge which you want to use. Brown some pork mince with a little soy sauce, toss in the veggies and stir fry until just soft. Leave the mixture to cool a little.
Place one spring roll wrapper on a clean surface and place two dessert spoonfuls of the mince mixture into the middle. This is more than you would usually place in the wrappers, but we are trying to use more of the filling than the wrappers. Fold the wrappers at both ends and then gently roll sides until you have a cylinder (albeit a large, thick cylinder). Transfer to a baking tray. Repeat until you have run out of mixture.
Lightly spray the spring rolls with oil and bake in the oven for 15-20 minutes. You might find that a couple of the rolls split, but I assure you they will still taste fantastic. Serve with sweet chilli sauce.
