Jason's guiness corned beef
Just delicious. The sweetness of the carrots with the guiness reminded me of the stout stew I made a little while ago. I'm thinking that this flavour combination is a winner - I wonder how carrots baked in stout/guiness would go - might need to try that one.
The broth was fantastic, and I have actually frozen some of the extra to use as stock in future dishes. Mmmmmmm!

II made a risotto with some of the left over stock which I will post about soon - it was so good! Wonderful rich flavour!
