Honey and citrus pork skewers

The sticky goodness that is a honey and citrus marinade is certainly one of my favourite flavour combination's. Chuck in a little bit of garlic, perhaps some balsamic vinegar and some herbs and you will have a delicious sauce that goes with pork, chicken, lamb or beef. We marinated some lean, cubed pork in this mixture the other night, cooked it on skewers and served it with a salad and wedges. Easy, low fat and delicious - the hardest part is remembering to chuck your meat in the marinade an hour or so before you want to eat!
Marinade
2 tbs fresh thyme, juice and zest of one orange, 1 tbs lemon juice, 1 tbs honey, 1 clove garlic, crushed. Mix together and then add meat. Marinate 400g meat for 1-2 hours. Cook over heat on a grill, in a frying pan or on the BBQ.
