Impossible Pie

It’s impossible! Although, actually it’s very easy.
This recipe for impossible pie comes from the same batch as the easiest quiche ever. It’s one that we used to make with my mum and I have no idea where it came from.
I do know that it has one of the most easily recognisable smells from my childhood and still tastes just as good as it did 15 years ago.
Impossible Pie
2 cups milk
1 cup sugar
1 cup desiccated coconut
½ cup butter
½ cup plain flour
2 tsp vanilla essence
2 eggs
1. Combine all ingredients
2. Grease a 25cm pie plate
3. Pour mixture into prepared dish
4. Bake at 175 degrees for 1 hour
