Indonesian Noodle Salad

With all the hot weather we have been having around the place lately, I was looking for a meal that was refreshing, quick and simple, yet still satisfying. This Indonesian inspired noodle salad did the trick. Feel free to use whatever vegetables/ salad mix you have in the fridge, but don't forget the soft-boiled eggs, they really make this dish shine.
Indonesian Noodle Salad - serves 4
200g fresh egg noodles
1 lebanese cucumber, cut into batons
1 red capsicum, cut into batons
1 yellow capsicum, cut into batons
1 small red onion, halved, thinly sliced
1/3 kecap manis
4 soft-boiled eggs, halved
2 tbsp chopped roasted peanuts
lime wedges to serve
Cook noodles as per packet instructions and drain. Place in a bowl and top with sliced vegetables. Drizzle over the kecap manis and top with halved eggs and a sprinkling of peanuts. Serve with lime wedges.
