Jelly slice

I think there is a definite link between food and nostalgia. This jelly slice (from my orange book with the flowers) is very similar to one that I grew up eating.
My parents have some close friends, who have two daughters, slightly older than me and my sister. We would spend most New Year's Eve/New Year's Day celebrations with them, as well as birthdays, and random weekends. Along the way, I ate a fair bit of this slice
It's actually more of a cheesecake slice, than a jelly slice, but jelly slice is the traditional title.
Jelly slice
1 x 250g Marie biscuits, crushed
100g butter, melted
125g white chocolate, melted
1 x 250g packet cream cheese
1 x 400g can condensed milk
1/4 cup lemon juice
150g white chocolate, melted
1 tablespoon gelatine
2 tablespoons water
1 x 85g packet jelly crystals
1 cup boiling water
1. Grease and line a 20cm x 30cm baking tray.
2. Combine biscuits, butter and white chocolate in a large bowl. Press over base of prepared pan; refrigerate for 15 min or until set.
3. Place chopped cream cheese, condensed milk, lemon juice and white chocolate in a large bowl; beat with an electric mixer until combined.
4. Sprinkle gelatine over water in a cup, stand cup in a pan of simmering water; stir until dissolved. Mix into cream cheese mixture. Pour over prepared base; refrigerate for 1 hour or until set.
5. Dissolve jelly crystals in boiling water in a heatproof jug; cool to room temperature. Pour over cream cheese mixture; refrigerate for several hours or until set before cutting.
Perfect to take along to a summer's barbecue or picnic.
