Lamb and Orange Salad

Generally speaking, Mr Rough Cooking is not a man who enjoys fruit with his meat. He doesn’t mind apricot chicken, or pineapple on pizza, but I knew that this warm lamb salad with baby spinach and orange segments was going to be a push. But, never one to turn away a plate of food, he dug in and didn’t complain too much.
Personally, I quite enjoyed this one, even after we both got through a few lettuce leaves and decided to swap some of my lamb for some of his orange pieces.
The trick with this one is the flavouring, and it is the little sprinkling of cumin which really complements the sweetness of the orange.
Lamb and Orange Salad
400g lamb steaks
ground cumin
1 orange, segmented
100g fetta or firm ricotta (I used some of my home made buttermilk ricotta), ¼ red onion finely sliced,
lettuce and baby spinach leaves
8 slices cucumber
olive oil.
Very simple to make, simply sprinkle your steaks with a little cumin then either pan fry or grill them until cooked to your liking. Leave to rest a few minutes. Combine all other ingredients, then slice lamb and toss through salad. Drizzle a small amount of olive oil over the salad and serve.
If you a not a big fan of fruit in your meat dishes, try this warm lamb salad. Very similar and also delicious!
