Lamb Curry with Stir-fried spices

It seems that whenever I have Indian, I crave more and more of it. The spice, the slow cooked meat, the fresh herbs - everything combines to create a delicious meal. The other advantage with Indian food, is that if someone unexpectedly drops round, you can add more rice, thin out the sauce, and you still have a decent meal for friends. Such was the case the other night when we made this.
I think long-term, I might have to cut back on the curries though - it seems that a particular friend if dropping round unexpectedly more and more!
Again, don't be scared by the list of ingredients - they are great ones to keep in your pantry.
Lamb curry with stir-fried spices - adapted from 50 Great Curries of India by Camellia Panjabi
Serves 6
1/3 cup oil
3 bay leaves
4 green cardamon pods
1 cinnamon stick
6 cloves
2 onions, finely chopped
1 tsp ginger, finely chopped
2 cloves garlic, finely chopped
2 green chillies, finely chopped
500g cubed lamb
1/2 tsp turmeric
1 1/2 tsp ground coriander
1 tsp chili powder
1 tsp garam masala
1 tinned chopped tomatoes
1/3 natural yoghurt
coriander leaves to garnish
1. Heat the oil with the bay leaves, cardamon, cinnamon stick and cloves. Add the onion, and saute until lightly coloured.
2. Add the ginger, garlic, chillies and lamb and stir-fry over low heat for 20 minutes. Add a little water if the mixture becomes too dry.
3. Add the turmeric, coriander, chili and garam masala with two tablespoons of water. Add the tomatoes, cooking for 5 minutes, and stirring frequently.
4. Add four cups of water and simmer for 15 minutes. Stir in the yoghurt and when heated through serve. Garnish with coriander leaves.

I LOVE CURRY!!!
I think I lean more towards the Asian curries but still eat heaps of Indian curry. There is one I get from the food court for lunch I just worship.
Lamb Saag - I think the word is saag - it's a lamb and spinach curry.
I really like the picture of the empty plate too Helen - it tells a good story, one of satisfaction, enjoyment and company.
Mum has bought the ingredients too for me to make the chardonnay and grape cake when I get to hers in a few days time - YUMMY
