Lemon Lime Delicious

The lemon tree is full of fruit, and actually, all our fruit trees are starting to bud up and burst into flower for spring - quite an early start here! So, lemon recipes are on my mind. For a very simple dessert, you can't go past a lemon lime delicious - or perhaps a passion fruit delicious, or a lime delicious, or a blood orange delicious.... anyway, you get the picture - what ever fruit you have, you could probably make it into this dessert.
This has quite a strong lemon flavour to it, so if you don't like it strong, I would recommend reducing the amount of lemon juice in the dish.
Lemon Lime Delicious
50g butter, softened
3/4 cup caster sugar
2 eggs, seperated
2 1/2 tablespoons plain flour
1 cup milk
3/4 cup lemon juice
2 tablespoons lime juice
1. Preheat oven to 180 degrees. Grease 4 x 1 cup ramekins and sprinkle with caster sugar.
2. Cream butter and 1/2 cup caster sugar in a large bowl until pale and creamy. Add egg yolks, one at a time, mixing well. Stir in flour, milk, lemon and lime juice.
3. Beat egg whites in a clean bowl until soft peaks form. Add remaining 1/4 cup caster sugar a spoonful at a time until the sugar has dissolved. Fold into the lemon and lime mixture.
4. Spoon the mixture evenly into the ramekins. Place the ramekins into a large baking dish. Pour hot water into the dish so it comes half way up the side of the ramekins.
5. Bake the puddings for 25 minutes or until they are well risen and golden. Dust with icing sugar and serve immediately.
