Lovely Leftovers

Anyone who has ever watched me lunch knows what a huge fan I am of leftovers. Cooking for just two usually means there are another two serves left over, perfect for the next day when the tummy starts to rumble at work. However, there are times when simply lunching will not reduce the leftovers we have and a plan to work these into another meal is required.
Such was our situation the other night. We had roast beef for dinner, and ended up with quite a lot of roast beef left over. So, nothing else for it but to make our roast beef into a new meal of its own.
Left over roast beef magically transformed into shepherds pie.
Boil water and add potatoes for mashing. Cut up left over roast beef into small cubes. Chop a couple of carrots, as well as some spinach. Add one can of chopped, tinned tomatoes and a small amount of beef stock if needed. Place into a casserole dish.
Spoon mashed potatoes over the top and add a generous sprinkle of grated cheese – a combination of cheddar and parmesan works well. Place in the oven for about 30 minutes until beef mixture is heated through and cheese is melted.
If you have extra, take some leftovers for lunch the next day!!
