Low-fat chicken satay

It’s an odd thing, but satay is one of those foods which on occasion I really crave. It doesn’t matter if it is beef or chicken or even a satay vegetable dish, but the sweet peanut flavour is something which I just have to have.
Flicking through the new CSIRO cookbook, I spied a recipe for chicken satay which I immediately wanted. So, without further ado we cracked out the grill and mixed together the sauce. This was a really easy recipe to make and is a great one for an after work meal because your cooking time it around about 10 minutes - perfect! I wouldn't say this is the best satay I have ever had, but for a low fat, quick version, it is pretty good.
Chicken satay with peanut sauce (from the CSIRO Total Wellbeing Recipe Book)
800g chicken breast, cut into 1cm pieces
2 tbs soy sauce
2 tbs lime juice
2 cloves garlic, crushed
1 tbs vegetable oil
2 teaspoons mild curry powder
Place the all ingredients in a bowl and mix well. Cover and refrigerate for at least an hour. Thread onto skewers and grill, around 3-4 minutes each side until cooked through.
Peanut Sauce:
1 tbs oyster sauce
1 tbs peanut butter
2 tbs sweet chilli sauce
1 tbs lime juice
Mix all ingredients together. If you want to serve it warm, heat it up in the microwave. Serve over chicken.
Serve with a green salad.
