Low-fat tuna patties

I was actually quite impressed with how these little tuna patties turned out. It was a different process than I had done before, but one which I will happily use again. The trick to making these light and fluffy, is the whisking of the egg whites until they form soft peaks. Surprisingly this holds the whole lot together, and although I questioned their structural integrity upon putting these in the pan, they quickly came together as they cooked.
So, to make: combine 300g drained tuna in a bowl with a quarter of a red onion, thinly sliced and some seasoning. Next, separate two eggs, placing the whites into a clean bowl and the yolks into the tuna mixture. Combine the yolks into the mix and then add two tablespoons of wholemeal plain flour. In your clean bowl, whisk the egg whites until they form soft peaks (for bonus points do this by hand as I did). Once whisked, gently combine the egg whites with the tuna mixture.
In a large frying pan, heat a little oil. With wet hands, form the tuna mixture into patties and gently place into the pan to fry. It will seem pretty runny, but believe me it comes together beautifully. Pan fry on each side for a few minutes, until golden and cooked through.
Serve with some good quality mayonnaise or natural yoghurt, a sprinkling of fresh coriander and a green salad.
