Marinated Artichokes

This recipe takes the artichokes which are growing in your garden, and turns them into something you can use in an antipasto, salad, pasta or on a home made pizza.
If you wish, you can also eat them as they are, straight from the fridge.
Marinated Artichokes
4 globe artichokes
3 lemons, halved
4 tbsp olive oil
8 mint leaves, finely chopped
1 handful flat leaf parsley leaves, roughly chopped
1 garlic clove, crushed
Bring a large saucepan of salted water to the boil. Fill a bowl with cold water. Add the juice of one of the lemons to it. Prepare the artichokes as per here. Do not cut them into quarters yet.
When the water is boiling, add the artichokes, weighing them down with a plate and simmer for 20 minutes. Test that the artichokes are done by pushing a knife into each one just above the stem. Drain the cooked artichokes for a minute then slice in half. Put in a sterilised jar with oil, herbs, garlic and juice from the remaining lemon halves. Season.
