Marinated Port Figs

Earlier in the year we came home with bags of figs from my father-in-law. They only keep a couple of days before they go bad, so we gave lots away, ate lots of them fresh, and dried a whole heap of them as well.
I came across this recipe in a book we had at work, and felt that I should definitely give it a go - if for nothing more than to find another way to enjoy the delicious fig flavour for a few more months.
Apologies - I do not know the name of the book this came from.
Marinate Port Figs
500g dried figs
100ml red wine vinegar
150ml port
100ml water
200g sugar
Place all the ingredients in a saucepan, stir to dissolve the sugar, the simmer gently for 30 minutes. Transfer the figs and the syrup into a hot sterilised jar. The figs improve with time, and will be delicious in a couple of days, better still in a couple of weeks. Once the jar is opened, keep it in the fridge. Serve with cheese and crackers or thinly slice baguette.

Thanks for the comment - it's wonderful to have access to people with mature fruit trees!
My father-in-law actually just has one tree, but it is huge, and always has lots of fruit. Also, the placement of the tree, at the bottom of a cut out slope, meant that it's relatively easy to collect the fruit from the top of the tree as well as on the lower branches.
We also have a fig tree at home, but it's only a couple of years old. This year we were able to pick maybe a dozen fruit, all about the size of a golf ball - they were delicious though!
