Motlen Chocolate Cakes

Good friends Sally and Bianca came round on Wednesday night for dinner. I wasn't sure what to make, Sally doesn't like pasta (which immediately rules out all those easy dishes) and Bianca eats pretty much anything. The end result was a chicken, leek, mushroom creamy casserole. The sauce was quite a bit runnier than I was expecting, and next time I will serve it with either some mashed potato or some rice to soak up a bit of the sauce. It was delicious however, and as we sat at the table, slurping from our soup spoons it was declared a success.

After a short break, during which we again solved all of the world's problems, the oven went on for dessert - Molten Chocolate Cakes. I had made the mixture when I first got home from work, and they were just sitting in the fridge ready to go. The trick, according to the recipe was to cook them, in their individual ramekins for just 12 minutes - this makes the outside go hard, and leaves the inside beautifully gooey when you put your spoon into it. I served them with some cream, thinking that they would need it to take away the richness of the chocolate, but they were deliciously light and not as rich as expected. A definite winner! They're going onto high rotation in the dinner party menu!

This weekend looks to be a busy one food wise. A Christmas in July feast tonight, a 21st birthday dinner tomorrow at the Italian Club in town and then Chinese for another friends birthday on Sunday. Monday night there will be a girls gathering, to which I have been nominated to take a 'yummy dessert' - so much pressure! No idea what that will be yet - but I promise to take pics once something comes out of the oven/fridge!
